I'm sure there are better reasons but my guess it is for the same reason that the mountain must be climbed, because it's there.

Eight years. It starts as the remnant of the last drop and grows larger slowly for approximately eight years. Then it falls.

Manufacturers of equipment used to handle liquids need to know the viscosity of the liquid.
Pitch was an unknown prior to this experiment. The eighth drop fell on 28 November 2000,
allowing experimenters to calculate the pitch as having a viscosity of 230 billion times that
of water.
In case you didn't know, the viscosity of water is the reference point for viscosity measurements.
The viscosity of water at 20 °C is 1.0016 millipascal seconds (which is conveniently close to one.).
If you or I wanted to measure the viscosity of a liquid, we could measure water, call that one, then
measure another liquid. If the the other liquid flowed at half the flow rate of water, the other
liquid would have a viscosity of 2 compared to water.

Totally excellent reply about the "pitch drop," Wayne. Thanks!

That burger would turn me into a vegetarian. It looks very unappetizing.
